Sounds good? Let’s start! The recipe is quick and easy to make.

Fruit tarts

base

5 soft medjool dates

80 g ground almond

30 g ground coconut

10g flaked almonds

a pinch of salt

a pinch of black pepper

cream

350 g silken firm tofu

juice of 1,5 lemon

1/4 cup of agava syrup

plus

favourite summer fruits

Before you start press/drain tofu.

Add all ingredients to food processor. Remember, drop in dates one at time until the mixture resembles a dough. Line tart pans with parachment paper and divine your dough between 4 pans. Use your fingers to spread the crust. Leave in the fridge for few minutes.

Add all your cream ingredients to pressed tofu. Blend until smooth and  adjust sweetness to your taste.

Take your crust out from the fridge and top with your lemon filling. Chill in the fridge again for 1-2 hours and decorate your tarts with fruits.

*Tips*

– soak dates in hot water for 5-10 minutes if hard

– to press/drain tofu use muslin cloth
